Veg Stew

Hi
Any one got a quick and simple recipe for veg stew for a novice.
Ingredients would be potatoes, carrots, turnip, onions etc.

Yeah, just chuck a tin of tomatoes,maybe some veggie stock,wine,& any/all veg you like in a slow cooker/stock pot & cook it til it's ready.Hard veg like spuds,swede,turnips,etc take longer than soft stuff, like broccoli,colly, mushrooms, so add them for the last hour or so Veg.dumplings,rice, bread,whatever you fancy to accompany. A bottle of good robust red wine will do wonders.All stew/casseroles are just chuck it all in, & cook to your taste, not an exact recipe.I'd also add chicken,bacon,or beef,rabbit,game as well, but I guess thats not for you Just be bold & chuck it all in, it'll be fine. Oh my god!
Vegetables are such delicate things!. The trouble is those of us that have converted to the old veggie style seem to want to cook in the old beefy ways.
Veg does not need or require slow prolonged cooking.
Swede actually cooks really quickly, normally much faster than carrot or potato so it must be treated with respect (hence why it always lands up mashed)
For a really good veg stew I would steam all the root veg before hand, until it is just off the crunch point, for most veg it will need to be done in stages so that it is all at that 'critical mass point' at the same point.
The other thing is to make sure there is plenty of it, for a stew for four people you want to be seeing 2kg of veg.
Make a nice sauce up, not to much and frankly from what ever recipe you like, add the just barley cooked veg and bring it back to the boil.
If you are a straight out veggie, use some beans, (butter beans usually good in this application) to get your protein input.
Serve with lots of very good bread.

OH my god Oh my god!
garys recipe sounds nice.Think I'll try it.Veg doesn't needor requireslow cooking,& steaming is my preferred way of cooking veg,but alex asked for a recipe for stew, which by definition is a slow-cook,low-mid temp.process.Steaming,& minimal cooking will keep the individual goodness & flavours of the veg intact,stewing,casseroling,call it what you will, is there to infuse/mix all the flavours together(as well as traditionally cooking cheap/tough cuts of meat).
