Best place for a holiday in May

I've got a week off work in the middle of May and I am looking for recommendations for a relaxing holiday destination/resort outside of Europe, preferably somewhere where the weather will be good .

I'm use to go to Holland.

I'm in a similar position and Madeira is high on my list, although technically - being Portugal - it is part of Europe.
I'm also planning a trip to Madagascar this year or next but research has suggested at least two weeks are needed.
I guess it depends what you are after, how about the Caribbean?

Considerations would include
Canary Islands, Furterventura, but not Caleta de Fusta. Virually guaranteed sunshine and your own different beach every day. Just accept the wind, its warm and pleasant
Dubai. May is not too hot. The locals migrate to Europe in July and August when it gets too hot. Lived in Sharjha and Abu Dhabi but not Dubai, and this time of year it is very pleasant.
Goa/Delhi. Relaxing beaches in Goa but you can't go that far without a visit to the sights in Delhiand Agra, even if limited to a week. May will beat the monsson and it won't be too hot. Last time I wemt it was April and beautifully warm in Goa but a bit more dry heat in Delhi

Thanks, Capetown and Dubai are definitely on the list, can you recommend specific hotels? I am also considering Mexico which seems to be pleasantly warm and dry at that time of year.
I went to Mauritius last year on honeymoon and stayed at Le Touessrok, so I'm looking for another destination this year.
