They specify this limit for a reason...!
Optical cable is quite 'lossy' when compared with copper cable for this type of application, hence manufacturers often specify a limitation on optical cable length.
The signal 'loss' is proportional to cable length, so if you use a cable that is too long, the light signal coming out at the far end of the cable may be too small to be received properly. It may also be adversely affected by tight bends in the optical cable which increase internal light reflection...
