There is 3 CD set on Sony SM3K 46559 which has most of Copland's important works inc Appalachian Spring - all conducted by the composer - well worth a listen.

A. Spring is one of those that there is a short version (suite) and a longer version. I finally heard the long version a few times it's quite wonderful tho the parts that were taken out were the quieter moments with a wonderful austere quality.
I really love his work he really hit it right at the time then fell from grace for being too provincial and when he tried the 12 tone system critics scoffed at him.
Some great songs too, tho I hate hearing the one about the farmer and the cow etc. But the Shaker song 'Tis a Gift to be Simple' is just utter beauty. It is quoted in A. Spring
