In 2004 I posted my concerns that the remake wouldn't be a patch on the original.
Here I sit four and a half years later having just watched the series finale saved on Sky + and I will now admit to having enjoyed the entire series and I am sad that it has ended.
The finale brought together a lot of loose ends and provided closure on many aspects of the story.
I thought a superb touch was the original series music being played as Galactica and the fleet sailed into the sun.
What to watch now?

Agreed, I was also concerned when I heard of the re-make/re-model, but turned out to be my favourite Sci-fi show ever. It was fanatastic and sad to see it go. ( there are several spin-offs planned though.. ) My girlfriend dislikes anything to do with outer-space, but she was completely hooked. ( and you might want to insert a "spoiler alert" at the start of your post Brad ! )

Space 1999 would be a good contender, but I don't recall that many epic space battles in the series, but hey, there is always room for artistic licence.

I loved the sets on Space 1999, kinda like a giant Apple Store on the moon ! I will have to check out Blake's 7, I do not know that one.
I hope they never redo Logan's Run,.... Jenny Agutter in that dress !!!! wow !
I would trust those responsible for the Battlestar remake to remake anything though....

I could never get into Battlestar Galactica, although I tried. I couldn't get to grips with the Cylon woman, only ? could see. I did watch a few though, such a good cast, well made, I just didn't get absorbed into it all.
So bearing that in mind, if you are looking for a series with complex plots, brilliant acting, and conveniently starting on the BBC on Monday night, 'The Wire' is being run from the first episode. Baltimore cops, drug dealers, very gritty, and takes its time to draw you in.
An actor I worked with made a comment about it and Sci-fi fans, which we both are. Sci-fi fans are often happy to let things pass which they don't understand on first viewing, knowing that it is something that will become clear in the long run if it is important. We were talking about the slang/dialogue of the drug dealers in 'The Wire' being similar the the kind of language Sci-fi creates to both make its world real, or have names for things that do not (currently) exist.
I know just as some have a block with Sci-fi, and others have a block with cop series, but if you are open to it 'The Wire' is very rewarding. Starts Monday night BBC2 around 11.20 I think.
If you are looking for another Sci-fi series, and haven't seen it, then Joss Wheedon's 'Firefly' on DVD, and the film 'Serenity' is worth tracking down. Sadly Fox killed it after 14 episodes were made, but DVD sales were so big that Wheedon raised the money to make a film.
PS. I am working with the son of one of the directors of 'Space 1999' tomorrow, directing a comedy series for BBC3.
