I have used the two web sites and obtained good hotels in Florence and Pisa

innsofitaly.com and agriturismo.net.

'Agriturismos' are farm/rural-ish based accommodation. Inns of Italy is a good site but if you find what you want, book direct with the hotel and miss out on the additional booking fees.

Are you sold on Tuscany? Each to their own of course, but having been to both Tuscany and neighbouring Emilia Romagna last Autumn, we found that Emilia Romagna offers much the same scenery/great food/attractive cities without the tourism overload.

I'll be there next week, so I'll post if I find anywhere particularly good (or bad).
