As has been suggested, the two Village Vanguard discs are, in my view, without compare (At the Village Vanguard offers highlights from the two):
Waltz for Debbie
Sunday at the Village Vanguard
Later in his career, The Paris Concert (Editions 1 and 2) are both very fine, 2 especially. Conversations with myself is also very interesting, where he overdubbed himself.

Portrait in Jazz and Explorations, the other two albums of the trio with Scott LeFaro, are also wonderful, as is Undercurrent, the duet record with guitarist Jim Hall. Classic Evans for sure.

There are so many great Bill Evans albums, but I'd recommend starting with this:
The Complete Village Vanguard Recordings, 1961

This is the complete gig from which Sunday at the Village Vanguard and Waltz for Debby were culled, and is considered a sort of holy grail of the quintessential Evans achievement. Truly sublime.

The 180g vinyl from Analogue Production is much better than the standard LPs. I have four standard LPs of Bill Evans and I have bought the AP reissue of Waltz for Debby lately. The difference is too big. Check with www.acousticsounds.com, if you don't want to make compromises with the quality. The German www.jpc.de offers the album for Euro 6.99!

Emil is right about Acoustic Sounds LP's.
I have this one from Acoustic Sounds. It is 45rpm spread across 4 sides of 180g vinyl. It is gorgeous but expensive.

Acoustic Sounds also has a 180 gm 33rpm of Sunday at the Village Vanguard which is very good; I bought it at the same time as Waltz for Debbie. My JVC XRCD of Waltz for Debbie has gotten heavy rotation over the last couple of years and the interest in vinyl re-awakened by my Crimson 710's cracker jack phono section has led me on new forays into the re-issue universe.

If I have to pick one, this is it for me.
Love the title tune.
But this is CD release only.
Whilst it's a classic, like KOB, I've ODed on the 'Waltz for Debbie'. Still,fun to play on a piano, tho.

I've got xrcds of "at Shelly's Manne-Hole, Hollywood, California" and "Sunday at the Village Vanguard". I'm not in the least way a jazz expert but I really like both these albums.

No. It's a great album, IMO. I just wouldn't put it top of the list. Ditto turn out the stars.
