iTunes server on NAS?

I'm about to buy a NAS and wondered if it's possible to use the built-in iTunes servers on many to stream to the NDX, among other devices around the house? I quite like iTunes in many ways, but I can't dedicate my work Macbook to audio use. What I would like is to get the iTunes music off my laptop HDD and put it on the NAS...

Can I use Remote app to control any of these things, or is it just done at the streamer end?
