Best Curry Recipies?

At the risk of turning our manly forum into a version of 'Mums Net'.......I do enjoy making a fine curry whilst listening and sloshing back some nice vino.
Have a look at 'Mrs Chittaluru (yes, really) Family (Authentic Indian) Chicken Curry Recipe'.
Very tasty indeed.
Anyone else have any good chicken or lamb ones?

This is basic a quite tasty "old" family recipe, not sure who's family, Jivat's I guess.
We make up a small jar of the spices and use a few teaspoons as and when, seems to work for Chicken,Turkey,Lamb and beef. We vary the main part of the recipe depending what is available, but I think like most curries it's the sauce that counts.
Yes the paper is really that colour, it's tatty too I cropped the picture.
I have a favourite recipe for cooked chicken or turkey
(yes its another of those best ways of what to do (again) with that turkey)
TBH I am not a turkey or chicken fan unless it is serious flavoured with other stuff - see the next post.
Ingredients – serves 2 (3 if used with a starter)
3 tbsp vegetable oil
1 onion, finely chopped
3 garlic cloves, finely chopped
200/300ml vegetable stock
Small can chopped tomatoes
2 tbsp lentils
1 tsp ground cumin
1 tsp ground coriander
½ tsp Turmeric
¼ tsp Chilli powder
¼ tsp Garam Masala
¼ tsp Salt
Ground cardamom or crushed seeds
300g roast Turkey, chopped into 2cm pieces
1 tsp grated root ginger, (optional)
1 tsp lemon juice
Small bunch Coriander, chopped
Method
Heat 3 tablespoons of the oil in a saucepan and heat until oil is hot.
Add the onion & fry until the onion is cooked but not browned.
Add garlic and continue frying until the onion is lightly browned.
Add cumin, coriander, turmeric and combine into the onion fry mix,
Add lentils and stir into mix, then add small quantity of stock to absorb into lentils for 5 minutes.
Stir in the turkey pieces & stir for about 5 minutes to infuse the curry in the meat.
Add chopped tomatoes with the remaining oil, chilli powder, and salt to the turkey onion & lentil mixture & cook until uniformly simmering.
Add stock – regulating consistency to preference.
Simmer for 30 minutes
Add garam masala & lemon juice at the very end.
Fantastic veggie mix to make bo-o-oring chicken breast taste great
Also great with pork chops, in fact its great with anything & it BBQ’s well.
1 medium sized medium chopped onion
1 medium chopped red pepper
6 sliced medium sized button mushrooms (more works OK)
2 chopped gloves garlic
1 tbs veggie or olive oil
Put onion & peppers in an oven proof flat dish
- dish size about 25cm x 15cm (veggie mix fully covers the bottom +)
(Add garlic now if you are not so fond of "that" garlic taste)
Add oil & stir into mixture
Place in 180’c oven
Cook for 15 minutes
Remove, add garlic (if not added already) & mushroom slices & stir
Cook for a further 30 minutes stirring every 10 minutes to prevent sticking & burning.
