I've just noticed that there's now a 1TB variant available - does that mean that the 2 x 500GB has disappeared for good?

Yes, and it's not possible to upgrade to the 1TB version ...

The 1 x 1TB version uses a different drive mounting arrangement which requires additional machining to accommodate–the 2 x 500GB and 2 x 400GB mounts are identical, though the drives are different.
The SSD upgrade is well worth considering on both operational and performance-based grounds.
