I don't have any nServe devices, but all upnp servers tested here have given a "tracks" or "items" view. This seems to be a selectable view via the checkbox you have found, so we're on the same ground. I didn't really understand your question before, I guess!
In in the new naim app (no longer running the original nStream app) it does take a few seconds to completely populate the list of song titles (each with its associated album cover artwork). After that, I tried typing text into the search text box at the top of the scree and, as expected, it filters town the list to display only those titles containing your search string. At first, it appeared to only show titles starting with the string, but I think i hadn't waited long enough, as a second trial worked fine.
My my experience with this search results library was the same as any other view: selecting the track causes it to play immediately; using any of the ways to open the popup menu (press and hold in icon view; press the three dots at the right in list view) offers extra options including play now, queue next, queue last, etc.
