A little digression first, if I may. A top quality recording, per se, is useless, unless the performance captured on the recording is superb.

I can suggest my two favourites:

EMI's 1953 mono La Scala recording of Puccini's 'Tosca', under Victor de Sabata, with Callas, Gobbi and Di Stefano in the main parts.

Jeff Buckley's 'Grace'.

These are constants. The third would vary with mood, from Walter's extraordinary 1938 Vienna Mahler Ninth to Ms Germanotta's 'Fame Monster', via Carlos Kleiber's Beethoven, Jimi Hendrix, The Beatles, and so much else.
