To those designing the iOS App, please may we have a numbered readout for the volume control next release? Would be most useful.

Well there is volume control, and then there is volume control. For the devices that have a digital volume control, this would be possible I can guess. But the iOS app also does volume control for devices with analog volume control. For the latter, a readout would be impossible.
Even with a digital volume control, it may not be possible because there may be no means currently to read the setting from the unit being controlled and send it to the app. So this could be a non-trivial ask, involving a firmware change in the streamers and an update to the app.
Having said that, I do agree it would be useful. I run my TV sound through my Naim system and know that 41 is the right volume control setting on my 272 for normal family viewing, taken across the range of sound levels the TV companies use. But I can't see the 272 display from where I sit.
So Before watching the TV I often get up and set the 272 to 41 with the volume control on the front panel, which isn't a very remote way of doing things!

With my 272 and UnitiLite you can see the level on other then the naim-app. For example I often use linn kinsky to adjust the volume level if I can't see my 272.

I assume there is feedback from the Uniti / NAC-N back to the app as the position on the bar moves if you turn the volume up and down manually on the unit.
Also, just for accuracy, the Uniti and NAC-N don't have "digital volume control" they have a digitally controlled (analogue) volume.

On the first point, yes you must be right and also Reinibert has already pointed out that the Linn app working with the Naim kit shows numbers.
And on your second point, I agree with your correction, but Bart and I were both trying to draw a distinction between the type of volume control used in the Uniti and NAC-N ranges and that used in the preamps and SN. They are all ultimately digitally controlled analogue, but they don't all have motorised potentiometers.
