Hi can the Amazon Dot be connected to the Uniti 2( non BT version} ? Thank you

I don't have either, but from amazon it appears as if the dot has a 3.5mm audio output. The Uniti has analogue input, so you'd need 3.5 to 2 male RCA. Appears as if there is no digital output from the dot, unfortunately.
