So when does a photograph stop being a photograph and become, well I'm not sure what it is after processing and manipulating.

Processing and manipulation are nothing new. Most of the tools in Photoshop are named after darkroom techniques they imitate. I'm not sure how much of the stuff that guy did to his pic could have been done in the darkroom, but I'm guessing a lot of it could.
So I suppose that would make a processed and manipulated photograph a photograph.

I think that when elements are added to an image it becomes a CGI (computer generated image). As long as you are working with the composition you got and the natural light you had, then it is still a photograph.
