Hi Oakey - I'll recommend the Kings of Convenience and their album "Quiet is the new loud" and "Draw" by Matthew Jay.
Both obscure I know but you'll find them on Amazon and you may be able to listen to a few snippets before making a decision.

Following on from Mindy Smith and Patti Griffin in the American Country/Folk vain (Americana?), Caroline Herring and Laura Cantrell both mainly accoustic and with harmonies, but for guitar solos as well, try Gillian Welch but I'm not sure if my favourite of her's, Time the Relevator can count as easy listening.

Thanks so much, Fernando, especially for putting me in with such fine company.
If you haven't heard it already, I think you'd enjoy my newest album, Remember the River, as well.

No shameless plug there, Fred.

look to some of the acoustic discs from Dave Grisman's label. Several acoustic discs with Jerry Garcia, as well as the great tone poems discs, which are all instrumentals. Some Windham Hill label stuff maybe good as well (lots of guitar and piano stuff). Hope this helps.

A plug, yes. Shameless, no.
But the pitch was lobbed right down the middle of the plate ... I had to swing!

Nick Drake's Way to Blue is a good start point if you like John Martyn.

I was listening to "Alone But Never Alone" by Larry Carlton this morning, and it strikes me as just what you described. Technically classified as "smooth jazz" I suppose, but def. NOT jazz. Larry plays all acoustic on this one, and it's quite pleasant.
There's some good modern "EZ Listening" stuff to be had from the Windham Hill catalog (Shadowfax comes to mind). In a similar vein, Paul Winter made some interesting records in the 80s (and a lot of crap, too, but Wintersongs and Canyon are nice).
