yes and yes.
For the latter you will need a mini jack-to-RCA (or DIN). You will go out of the iPad from the earphone output and use the iPad's internal DAC.
Dont expect this to sound very good.
But if you are only streaming lossy music anyway it probably wont matter.

only the airfoil speakers app is available for the ipad, no?
this means you can run spotify on a macbook and play it over the ipad speakers. over wifi.
there are a few USB-DAC:s that work with the iPad (and many that do not work) if you have the camera connection kit. but then we are back in wire-land again.

A) Yes, you can use the Apple Remote app on an iPad to control iTunes. However the application is "designed for iPhone" and is just zoomed for the iPad so graphics, etc. can be quite blocky. Also check out yTracks app for the iPad.
B) The iPad can't sent it's own music via Airfoil or direct via WiFi to an AirPort Express / Apple TV. If you want to feed music to a HiFi from an iPad you have a few options:
Hope one of these options will help you...

- connect via analogue either via Mini-Jack / Headphone socked or (slightly better) via Dock connector.
- use the Camera Connection kit to connect via USB to a compatible DAC (needs to support 16/44.1).
- use Bluetooth to connect to a DAC such as Chord's GEM - either direct or via APT-X dongle.
- use a proprietary wireless technology to connect to a DAC such Arcam's rDAC (wireless coming soon).
- wait for the iOS 4.2 update (due around November) which will allow AirPlay from iOS devices as well as iTune; to AirPort Express / (new) Apple TV / third-party AirPlay devices. The AirPort Express / Apple TV would need connecting to a DAC for best quality.
Hope one of these options will help you...
