Weekend breakfasts

At weekends when there is time to do it, I like to cook breakfast. My daughter loves pancakes, so Sunday breakfast was pancakes, syrup, bacon (not for me though), scrambled egg, toast, coffee.
There seems to be a limited breakfast menu in my head, so any ideas for something more interesting?

Wow, what a topic! This one could rival the pizza thread in which we all agreed Chicago style deep dish was best Wink

My 2c or ~1p these days:

French toast done right is great - fluffy, melt in you mouth sort of cross between custard tarts and Yorkshire pud. Done wrong it's like tearing into the leathery Yorkshire puddings from school dinners. Should be served with powdered sugar and real maple syrup. Don't know about using just egg whites - I use the whole egg and some milk.

Bagels - with just cream cheese, an "everything" bagel is great, but with Lox, I'd go just onion. Too much distraction otherwise. Noah's bagels are the best. Speaking of bagels, IIRC there are a few places at the end of Brick Lane, London where you can get them fresh very early -- just the ticket after a long night out.
