nvi or dvd5/av2?

Apologies if this is too many questions in one go...
Had been planning to get full nvi/nsat/ncent etc system to go with projector and screen. Hifi will be in separate room from this (unless I can convince myself that doing some sort of combination with the hifi is a good idea - combining would mean I could upgrade the lot, mmmmmmmm!).
Have been thinking further about this and want to consider properly the alternatives, not least because with the dvd5/av2 route I could pick up second hand gear much more easily - and I am slightly nervous about the various nvi issues posted on here, although I recognize that tthings seem to have settled down for most people.
I have seen many comments saying that it is the centre (and front left/right?) speaker(s) that is(are) the most important for quality of cinema sound. I'm not too fussed about having rear speakers if I can instead have better sound from the front
Am planning to have projector and screen. Not sure whether (if possible?) this will be in conjunction with TV, so just use projector for special occasions/movies whilst using sound generally, or if should be in separate room. I have two rooms in mind:
(1) ground floor formal sitting room (around 18ft x 12ft) where would be constricted by open fire at one end, and entrance doors either side. [Using this room for this would probably mean having main system in my loft study, which will have chipboard floors hence worse sound to main system if there but ground floor concrete] The TV will not be in this room
(2) at one end of main living/kitchen (around 34ft x 14ft). This would probably mean preferable to combine somehow with TV (which will be in this room for children to watch), and would have to fire diagonally across room, to allow for fireplace
Not sure whether I need to decide which room it's going in first (surround would be easier in smaller room) or which system (2.1 plus centre spkr approach would fit better in bigger room)
On reading the above, it all sounds rather confused and as if I dont know what I'm talking about. Nothing misleading there then!
Any advice as to how I should explore what I want, what order to make decisions?
