Apple Cinema 30" HD Flat Panel Display

Does anyone know if the n-Vi will work with this Apple display, which has a DVI input and higher than HD resolution? Should be a smashing combination, other than the lack of a tuner.

Actually, not so good. You would be better off with a 32" LCD Sony Bravia. Computer monitors are only so-so with video.
Also, without a scaler, you will only see pixel for pixel, so your image will be much smaller than the total screen size.
I would test, before you buy.

If the display does not support HDCP copy protection over it's DVI input you won't have a picture at all!
HDCP is only optional on DVI because it was not necessary for computer use alone. Later came HDMI for video use, there HDCP is mandatory. Most computer displays does not support it at this point...

Thanks all for your input. I now realise the role and importance of a scaler!!

What I meant to say was that the Apple displays are not HDCP-compliant–a scaler would definitely be required, at least to provide HDCP handshaking to the source device.
Nor are they 16x9 aspect-ratio, but 16x10.
