Stop frame Digital camcorder?

Have done some stop frame animation with the kids - the hard way - taking photos on a digital camera and them stitching them together in Pinnacle. Looking for an easier solution, specifically a digital camcorder that is capable of stop frame video capture (i.e. that it captures single frames as a continuous videon not as discrete pictures). Anyone any advice or recommendations?

On the Mac, Quicktime Pro can automatically stitch together single frames. I just take a lot of stills and use that. Not sure if the Win version can too. Isn't there a Windows make Tiffs into a movie freeware?

Many digital cameras can take regular pictures on an interval (eg once a minute).
Given that, there must be a fair bit of software out there to stitch those images into a movie.
