Playing around with this again now that the Naim DAC is in house.
I cannot find any setting that will stream at full bitrate. No matter what I select in Foobar is 320 on the other end of things.
Any ideas?

Foobar or library issue, not PlugPlayer, which can handle hi-res without an issue...!

I am using Foobar (in my office) as the Media Server. Sending files over to my main listening PC in my hifi area (living room).
My Foobar in the Living is set as the renderer.
I have identical UPNP settings on both copies of Foobar. I have selected "transcode=never", "WAV-16bit" on everything possible etc....
I have scoured each of the four menus for UPNP settings and I can audibly hear that it is compressed.
My bitrate indicator in Foobar stays at 320 for all streamed music, (rather than seeing a variable bit rate that is much higher, as typical with FLAC).
Hmmmmm that makes me wonder, is FLAC the issue here? I dont think Plugplayer natively supports FLAC, but I was under the impression that the UPNP component for Foobar allowed it.

PS - The Naim DAC is certainly fun. Been playing with every possible option of getting audio to this puppy and having a blast. It all sounds great.
Dont get hung up on what sounds best and if one USB sounds better than another. Pick the input/method that suits you best and roll with it. Unless you have a 552/500 it seems unlikely that you will hear a significant difference between the inputs.
But then again there are those that say input 1 sounds the best and FLAC level 5 sounds better than 8.
To each their ears....
