Dried tomatoes

OK guys and galls, dried tomatoes, what do you use 'em for? I found a packet in the pantry still within its "best before" date and was wanting a bit of inspiration. Any suggestions...

Depends really on what specifically they are. If they are a good quality sundried tomato then stick them in a little white wine vinegar to go soft then blitz them with about twice the volume of olive oil for a fantastic dressing.
Or add them to a good tomato sauce and blitz for a nice pasta sauce.
If they are just a cheap dried tomato, then meh. But you could bang them in a soup.
May favourite is sunblush tomatoes, quite different and very nice.

Thanks for the hint Gary. Am I right in thinking that I could also blitz just the tomatoes and the vinegar and keep it in the fridge (for how long?), and add the olive oil just at the last moment ?

Well, I think as they are dried they are in the best position for longevity.

If you are in no rush to use them, stick them directly into olive oil to soften you can keep them that way for a long time. But if they are super dry the oil may not penetrate.

Soak them in olive oil, get some nice goats cheese, slice some on some bread, ciabbatta, etc, lightly toast it & put the tomoatoes on top. Add a glass of chianti for a nice lunch/snack/supper.
