Using a UnitiServe

I have just purchased a Unitiserve and I would like some practical advice.
Metadata
=======
I am in the process of ripping my CD collection and would like to edit (correct) the metadata.
I can correct Album title, Track name and Genre;
But how do I edit Performer, Composer and Conductor?
Is there a way to set a different Genre for different tracks of the same album?
Would it work to:
1. Rip the album, which has Genre A
2. Rename the album, delete tracks of Genre A, change Genre to B.
3. Rip it again and delete tracks of Genre B
I am a bit reluctant to experiment in case I make a real mess - before I have a proper (tested) backup!
Backup
======
Until my NAS arrives (the NAS is here but the drives are not), I have made a backup of the Unitiserve by copying all the data on the share to a Windows PC.
All I can see is a share containing a folder "music", with sub-folders "MQ", "EX", "HQ" and "LQ". Only MQ contains data, in the form of sub-folders for each artist. Is this correct?
Note that there is no simple way to test the backup.
Should I create a Music Store on a NAS and then try to restore to the NAS?
