The manual, as well as the menu on my own SU, only shows it can be set to English, French, Spanish, Italian, German, and Netherlands.

Yes.

To be more precise, you can set the device to have chinese interface language but seperately (in fact independently) you need to install a langauge pack during firmware upgrade to include chinese in order to allow chinese characters to be shown in track names, artist etc... This is by default not installed.
