Any (very) easy way to tell if DVD5 has the multi-channel board installed?

Yup, take it to your Naim dealer who can carefully remove the lid and check for you.

Ha, yes good point! Now I'm tempted to prise it off myself and see if anything is actually connected to the 7.1 Analogue DIN sockets I can see on the back...

Be very careful. Particularly with the centre/front locating bolt. Get this one wrong and you can break the magnesium zinc alloy lid, or punch through the top. Also, be sure to wear a properly grounded ESD wrist strap if you open up the unit.

iirc, only multi-channel units have the multiple RCA output sockets.

in stereo units, there is a cache instead of center, rear... sockets.
