is there any sonic benefit to have your uPnP server transcode a FLAC to a WAV file before it streams to your Uniti etc?

Yes it still does that

Like I said before,  Synology seem to have some unfinished issues with transcoding audio.

but via my mac I'll just get

<album folder>

I don't want all & shuffle

In the Configuration/ Edit/Browse Tree highlight the Artist or Artist/Album view (whichever one you've set up) and at the bottom tick the "No Track Listing" checkbox.

I'll double check this tonight, but I don't think this is the problem. it's displaying "all tracks" and "shuffle tracks" folders, but I don't want them to appear.

I suspect the PC and MAC versions are different.  The PC versions are now on to v5 but the MAC version may still be only up to v4.5.  This may account for the differences you see.
