There are many excellent recordings of Chopin's Piano Concertos. Among them, Rubinstein, Argerich, Pires, Zacharias, Perahia, Zimmerman, and Ax are all first rate. Another one that stands out for me is Francois under Fremaux. If I had to choose just one, it might be Emmanual Ax. The reason I choose Ax is because it seems to be the one I return to most often. On the other hand, next month I could recommend Francois, or literally any of the others. Not very helpful, I know, but you really are spoiled for choice in this repertoire...

I have the Pires and Argerich recordings but have not heard them. I think Vasary is great on this. Very romantic and lyrical.  Chopin as I'd expect to hear it.

I wouldn't be without Argerich / Dutoit, Blechacz, Zimerman / Giulini, or Fliter (and Pogo and Freire in #2), but if I had to chose, it might be this one:
